Allow me to preface this post with the fact that the holidays are essentially over and I dragged a$$ posting this so most people are probably tired of pumpkin stuff by now. But in a few months, maybe you will be craving it again and it will be impossible to find pumpkin anything except at Village Inn because I am pretty sure they always have pumpkin pie…

Pumpkin. It’s on everyone’s food brain this time of year. And why not? It’s totally friggin’ delicious. I know some people are feeling inundated by the umpteen commercials advertising pumpkin spice fill-in-the-blank, but some of us really LOVE pumpkin!

Hi, my name is Jess and I am addicted to pumpkin-flavored stuff.
However, I do not care for the calories that generally accompany said pumpkin-flavored stuff. And so I am always on the lookout for pumpkin treats that won’t make me feel eternally guilty for having eaten them.

That said, here is a delicious, protein-and-pumpkin packed treat that takes less than 5 minutes to make.

Protein Pumpkin Pie Yogurt

Ingredients

  • 8oz nonfat greek yogurt
  • ½ cup canned pure pumpkin
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • brown sugar to taste (nutrition facts below made with 2tsp Splenda brown sugar blend)

Prep

Stir together until smooth! Makes two 4oz servings, or if it’s too rich for you, four 2oz servings. And it tastes just like creamy pumpkin pie.
