Recipe: 10-Minute Paleo Pancakes

I don’t know about the rest of you, but I get really really tired of eating eggs all the time for breakfast. I try changing it up by making casseroles and stuff that can easily re-heated, and I usually lean toward savory dishes, but recently I have been looking for something quick and easy and akin to old-school, pre-paleo breakfast: like panacakes.

I have tried a few different paleo pancake recipes and none of them have been bad per say, they just didn’t really feel like the real thing, or they were too banana-y, or…. So, after trying a few recipes by some other popular paleo bloggers I meshed a few recipes together into something I have been enjoying ALL WEEK. These have a great pancake texture and don’t taste overwhelmingly like banana (which my husband can attest to because he’s not a fan of the flavor).

10-Minute Paleo Pancakes

Ingredients

  • 1 medium-size banana, mashed completely
  • 2 eggs, whisked
  • 1 tsp baking powder (for a truly paleo recipe, mix up your own baking powder to leave out the aluminum and cornstarch. It’s really easy!)
  • 1 tsp vanilla
  • cinnamon (to taste)
  • 1 tbsp coconut flour
  • 3/4 tbsp coconut oil

Prep

Get your ingredients ready

Mash that banana

Add your eggs and whisk it all together

Measure and add the baking powder, vanilla & cinnamon

Measure and add the tablespoon of coconut flour and mix it all together

Let it sit while you oil up the pan on medium heat. This will allow the mix to thicken up.

When the oil is melted, turn the pan to coat it and scoop the mix in (I like using this tiny ladle)

When the pancakes start looking bubbly, you can give them a flip.

When they’re nice and golden brown on both sides, they’re done! I serve mine with Kerrygold butter, pure maple syrup and some sausage links. (Fruit on top is a good idea too!)
